Ingredients

500g potatoes, peeled and grated

1½ cups Dairyworks Tasty Grated Cheese

½ cup self-raising flour

5 large eggs (1 for the potato mixture, 4 for the filling)

150g ham, diced

2 spring onions, finely sliced

2 tbsp milk

2 tbsp melted butter

Salt and cracked black pepper

Sour cream, to serve

Method

  1. Preheat oven to 180°C fan bake. Lightly grease a 12-hole muffin tray.

  2. Prepare the potatoes. Grate the potatoes and squeeze out as much excess moisture as possible using a clean tea towel

  3. Make the potato cups. In a large bowl, combine the grated potato, ½ cup Dairyworks Tasty Grated Cheese, self-raising flour, 1 egg and melted butter. Season with salt and pepper, mixing until well combined.

  4. Shape and bake. Divide the mixture between the greased muffin holes, pressing into the base and up the sides to create little cups. Bake at 180°C fan bake for 15–18 minutes, until lightly golden.

  5. Prepare the filling. Whisk the remaining 4 eggs with the milk. Stir through the diced ham, spring onions and remaining Dairyworks Tasty Grated Cheese.

  6. Fill and bake. Spoon the filling into the potato cups and bake for a further 12–15 minutes, until golden and cooked through.
